Our Unique Two-Step Production: Our commitment to excellence begins with our rare two-step production method:

1. Sonoma Fermentation & Aging: The honey wine is first fermented and aged in the heart of Sonoma County, allowing it to develop its initial layers of flavor.

2. Natural Bubble Creation: It then undergoes a second fermentation under pressure, creating those delicate and persistent bubbles naturally, without any artificial carbonation.

Our rare Brut Sparkling is fermented exclusively from raw orange blossom honey and pure spring water.
Barrel-aged for 12 months, then fermented again under pressure. A two-step fermentation innovation for
honey wine delivers and yeasty bouquet balanced by crisp effervescence truly unique —perfect for
celebrations that call for popping the cork on the drier side!
